Ingredients
  1. 1 tbsp. olive oil 15 mL
  2. 1/2 cup coarsely chopped pecans 125 mL
  3. 1/4 tsp salt 1 mL
  4. 1/2 lb. sliced, smoked or cooked turkey, cut in thin strips 250 g
  5. 1 large pear, cored & diced 1
  6. 3 cups romaine lettuce cut in strips 750 mL
  7. 1/3 cup raisins 75 mL
  8. 1/4 – 1/3 cup crumbled blue cheese 60 – 75 mL
  9. 1 Tbsp. fresh lemon juice 15 mL
  10. 4 – 10″ (25 cm) flour tortillas 4
Instructions
  1. Heat oil in frying pan. Add nuts and salt. Saute about 2 minutes. In large bowl, add nuts to turkey, pear, lettuce, raisins, blue cheese, and lemon juice. Toss to coat well.
Wrap & Roll
  1. Place each flour tortilla on a piece of waxed paper. Pile 1/4 of the filling in a strip about 1/3 of the way from the bottom over filling and roll once. Then fold one side over and continue to roll tortilla, leaving the side open. Be careful not to roll in the waxed paper! When finished, roll filled tortillas in their waxed paper with the top open so paper can be peeled down as they are eaten.

Seafood Kabob

No fuss gourmet. Serve this with salad for a  low cal and delicious dinner

 

Seafood Kabobs

Ingredients
  1. 8 oz scallops 250 g
  2. 12 oz raw shrimp (tails on) 375 g
  3. 1 cantaloupe melon (30 balls) 1
  4. 1 honeydew melon (30 balls) 1
  5. 1⁄4 cup lemon juice 60 mL
  6. 2 tbsp butter, melted 30 mL
  7. 1⁄4 cup brie cheese (remove skin) 60 mL
  8. 1⁄4 cup light cream 60 mL
Instructions
  1. On six 8-inch (20 cm) skewers, alternate seafood and melon balls. Mix lemon juice and butter. Broil kabobs 10 minutes, turning and brushing occasionally with lemon juice mixture. (Seafood should be opaque.) In a small saucepan, melt cheese and gradually whisk in cream. Drizzle the cheese mixture over kabobs. Broil until golden brown. Serve over rice. Serves 6.
Notes
  1. Note: 2 lbs (1 kg) of firm fish such as monkfish, shark or swordfish is a tasty alternative to the scallops and shrimp.

Best Seafood Lasagne

A Best of Bridge favorite! Serves 8 – 10 and best of all it freezes well

Ingredients
  1. 8 Lasagne noodles
  2. 2 Tbsp. butter
  3. 1 cup chopped onion
  4. 1 – 8 oz. pkg. cream cheese, softened
  5. 1 1/2 cups creamed cottage cheese
  6. 1 egg, beaten
  7. 2 Tbsp.chopped basil or 2 tsp. dried
  8. salt and pepper to taste
  9. 2 – 10 oz. cans cream of mushroom soup
  10. 1/3 cup milk
  11. 1/3 cup dry white wine
  12. 1 – 5 oz. can crab
  13. 1 lb. shelled deveined cooked shrimp
  14. 1/4 cup freshly grated parmesan cheese
  15. 1/2 cup grated sharp cheddar cheese
Instructions
  1. Cook noodles according to package directions. Place 4 in 9″ X 13″ pan. Cook onion in butter. Add cream cheese, cottage cheese, egg, basil, and salt and pepper.
  2. Spread 1/2 mixture over noodles. Combine soup, milk and wine. Stir in crab and shrimp. Spoon 1/2 mixture over cheese layer. Repeat all layers. Sprinkle with parmesan cheese and bake, uncovered at 350F. for 45 minutes. Top with cheddar cheese, brown under broiler and let stand for at least 15 minutes before serving.

  1. 3 lbs. baker potatoes,unpeeled 1.5 kg
  2. 1 Tbsp. vegetable oil 15 mL
  3. 1/2 tsp. salt 2 mL
  4. 1/2 tsp. pepper 2 mL
  5. 1 1/2 lbs. Atlantic cod 750 g
  6. 1/2 cup flour 125 mL
  7. 2 tsp. dry mustard 10 mL
  8. 1 egg, beaten
  9. 1/4 cup bread crumbs 60 mL
  10. 3/4 cup cornflake crumbs 175 mL
  11. 1 Tbsp. vegetable oil 15 mL
Instructions
  1. Scrub potatoes and cut into thick French fries. Pat dry and toss with oil, salt and pepper. Arrange in a single layer on a non-stick cookie sheet and bake in a preheated 425 F oven for 40 minutes turning twice. Cut fish into serving-sized pieces. Pat dry. Place flour and mustard in a shallow dish. Beat egg in another shallow dish. Combine breadcrumbs and cornflakes in yet another dish! Dust each piece of fish with flour. Dip into egg and roll in crumb mixture. Brush another baking sheet with oil and arrange fish in a single layer. When potatoes have cooked for 40 minutes, place fish in oven and baked 5 minutes, until fish is cooked through (should be flaky). Serve with cole slaw. Serves 6.
